creamy broad bean & feta dip

    • Half an avocado
    • 500g broad beans
    • 50g Feta
    • 2-3 dessert spoons natural yoghurt
    • Handful of mint
    • 2 spring onions (optional but they cut through the richness)

It’s broad bean season, and if there’s one thing we know for sure, it’s that everyone is excited about it! There’s something special about enjoying produce that’s locally grown and in season, and broad beans are no exception. The Method

1. Start by prepping your ingredients. De-shell your broad beans, then blanch them in boiling water for a few minutes before draining and rinsing them with cold water to make them cool enough to handle.

2. Roughly chop the mint and spring onions and add to the food processor. You can add these whole but may end up with a chunkier dip.

4. That’s it! Give it a blitz for a few minutes until it reaches the desired consistency. Make it look pretty with chopped mint, feta to garnish and a drizzle of extra virgin olive oil.
