26th March is Mother’s Day day when we celebrate all mum’s hard work, devotion and love. We have written a very handy gift buying guide to help you choose a perfect present, but how about going one step further and making your lovely mum some delicious raw chocolate truffles?
These truffles are super easy to make, and fun too, meaning dad and kids of all ages can get involved. They are really healthy and even include superfoods for an extra nutritional kick.
These raw chocolate truffles are easy to personalise too so that you can make a truly thoughtful and bespoke gift. Place them in a beautiful gift box with some ribbon, and we think it might just be the most perfect gift of all.
To make the truffles:
- Place the nuts in a food processor and blitz to a fine crumb consistency
- Add vanilla, salt, hemp seeds, lucuma or maca, goji berries and cacao powder and process again to combine
- With the processor running, add the dates then the syrup to form a sticky dough consistency
- Transfer to a bowl and chill in the fridge for 30 minutes
- When chilled, roll into small balls and then roll in your decoration of choice from the list to the left. We like to use a combination of 3 or 4 that are different colours to create a really pretty look, for example, roll some of your truffles in cacao powder, some in desiccated coconut, some in matcha tea powder and some in freeze-dried raspberry powder. That way you will have brown, white, pink and green truffles which will look really pretty on your plate or in your gift box.
Ways to personalise:
- Use dried apricots or figs instead of dates
- Use dried cherries instead of goji berries
- Change the nuts; you could use almonds, hazelnuts, raw pistachios, pecans or a combination
- Use a different flavour extract instead of the vanilla, for example, almond, rose water, orange blossom water, organic peppermint essential oil, organic orange essential oil (only 2 drops of organic essential oil – this is powerful stuff!)
- Add spices such as cinnamon, ground ginger, ground cardamom or chilli powder
